On Bacon

We stole this from Top Chef:

Cook bacon in the oven on parchment paper on a cookie sheet. Overlap the bacon. Bacon congeals. Cut it against the grain while it's still warm and you have bite sized chunks of bacon. You can break it off a piece at a time like a candy bar.
